Old Mexican Casserole
Next Day :
Fry sausage until almost cooked through.
Add scallion bottoms along with 1/3 of the green tops.
Finish cooking and turn off heat.
Add chilies and mix well.
Spray a 9×13″ baking dish with spray.
Place the bread slices on the bottom of the dish.
Pour the sausage mixture evenly over the bread.
Spread cheese over sausage & sprinkle diced green scallion tops & tomato over cheese.
In a separate bowl, beat eggs pour in half & half, then pour over casserole.
Cover with plastic wrap & refrigerate over night.
Preheat oven to 350 degrees.
Bake casserole for 35 min.
Cover casserole with aluminum foil & bake another 15 min.
Remove from oven and let it stand for 5 min before serving.
