Old Mexican Casserole

Ingredients
  

  • 16 ounces of ground sausage.
  • 4 scallions diced, reserving 2/3 of the diced green tops.
  • 2-7 oz. cans diced mild chilies.
  • 6 slices sourdough french bread.
  • 1 1/2 cups coby & Monterey jack cheese.
  • 1 small tomato diced.
  • 10 eggs.
  • 1 cup of half & half.

Instructions
 

  • Fry sausage until almost cooked through.
  • Add scallion bottoms along with 1/3 of the green tops.
  • Finish cooking and turn off heat.
  • Add chilies and mix well.
  • Spray a 9×13″ baking dish with spray.
  • Place the bread slices on the bottom of the dish.
  • Pour the sausage mixture evenly over the bread.
  • Spread cheese over sausage & sprinkle diced green scallion tops & tomato over cheese.
  • In a separate bowl, beat eggs pour in half & half, then pour over casserole.
  • Cover with plastic wrap & refrigerate over night.

Next Day :

  • Preheat oven to 350 degrees.
  • Bake casserole for 35 min.
  • Cover casserole with aluminum foil & bake another 15 min.
  • Remove from oven and let it stand for 5 min before serving.
