Corned Beef & Cabbage

  • 3-4 pound corned beef brisket with spice packet.
  • 10 small red potatoes.
  • 5 carrots peeled, cut into 3″ pieces.
  • 1 large head of cabbage cut into small pieces.


  • Place corned beef in a large pot and cover with water.
  • Add the spice packet.
  • Cover the pot and bring to a boil, then reduce to a simmer.
  • Simmer for 1 hr per pound.
  • Then add vegetables and cook until tender.
  • Add cabbage and cook for only 15 minutes.
  • Remove the meat and let it rest for 15 minutes.
  • Be sure to cut meat across the grain.
