Chicken Meat Loaf
Sauce for the Top
Boil or bake chicken.
Remove meat from bones and cut into small pieces.
Beat eggs slightly.
In a bowl stir in rice, breadcrumbs, fat or butter, broth, seasonings & chicken.
In a greased 1 1/2 casserole dish spoon in contents from the bowl.
Bake @ 350 degrees for 50 min or until firm.
For the sauce, blend fat, flour, then stir in chicken & cream until thickened, stirring constantly.
Add parsley, salt & paprika then add in olives.
Pour over loaf and cook for another 10 min.
Don’t be a chicken. (LOL) Give this dish a try. This main course includes rice and tasty green olives sauce for a decadent dinner.
