Chicken Meat Loaf

Ingredients
  

  • 64 ounces chicken
  • 3 eggs
  • 1 cup cooked rice
  • 1 cup bread crumbs
  • 3 tablespoons chicken fat or melted butter
  • 2 cups chicken broth
  • salt & pepper

Sauce for the Top

  • 3 tablespoons chicken fat or melted butter
  • 1/5 cup flour
  • 1 cup chicken broth
  • 3 tablespoons cream
  • 1 teaspoon minced parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 cup sliced green olives

Instructions
 

  • Boil or bake chicken.
  • Remove meat from bones and cut into small pieces.
  • Beat eggs slightly.
  • In a bowl stir in rice, breadcrumbs, fat or butter, broth, seasonings & chicken.
  • In a greased 1 1/2 casserole dish spoon in contents from the bowl.
  • Bake @ 350 degrees for 50 min or until firm.
  • For the sauce, blend fat, flour, then stir in chicken & cream until thickened, stirring constantly.
  • Add parsley, salt & paprika then add in olives.
  • Pour over loaf and cook for another 10 min.

Don’t be a chicken. (LOL) Give this dish a try. This main course includes rice and tasty green olives sauce for a decadent dinner.
