Burrito Supreme Casserole
Wrap tortillas in aluminum foil.
Bake @ 350 degrees for 15 minutes.
Combine tomato juice, seasoning mix & oil. Set aside.
Cook ground beef in a large skillet until browned. Drain off oil.
In beef, stir in beans & 1/2 cup of tomato juice mixture.
Bring to a boil, cover, reduce heat & simmer 8-10 minutes. Stir occasionally.
Remove from heat.
Place 1/4 cup of beef mixture & 2 1/2 tablespoon cheese on each tortilla.
Roll up tortillas & place seam side down in a lightly greased 13×9 inch baking dish.
Pour remaining tomato juice mixture over casserole.
Cover and bake at 350 degrees for 30 minutes
Uncover and sprinkle with remaining cheese, then bake an additional 5 minutes or until cheese melts.
Take out of oven.
Peel and cube avocado, toss with lemon juice.
Sprinkle avocado, lettuce & tomato over casserole .
