Preheat oven to 400 degrees
Line a baking sheet with non-stick paper.
On a lightly floured surface, roll out puff pastry until about 1/8″ thick, to about 11″x14″
Prick all over with a fork, leaving a 1″ border.
Brush the border with the egg wash. (Beaten egg& water)
Bake for 15-20 minutes or until turning brown.
Top the pastry with the bacon and sausage, sprinkle with the cheese.
Crack the remaining eggs on top.
Season lightly with salt, pepper & thyme.
Put back in the oven and bake for 8-10 minutes or until egg whites are set.
